BONE MARROW BUTTER

INGREDIENTS:

- 8 cross-cut marrow bones (from pasture-raised animals)  

- 1/2 cup unsalted butter, softened (preferably grass-fed)  

- 1/4 teaspoon sea salt  

- 1/4 teaspoon dried rosemary or thyme  

- 1/4 cup fresh parsley, chopped  

METHOD:

1. Preheat your oven to 220°C.  

2. Line a baking sheet with parchment paper and place the marrow bones, marrow side up, on the sheet.  

3. Roast in the preheated oven for 15–20 minutes, or until the marrow is soft and bubbly (this is when the magic happens).  

4. Let the bones cool slightly, then scoop out the marrow into a food processor.  

5. Keep the bones for broth if they fit in your slow cooker — they still have so much goodness to give!  

6. Add the softened butter, sea salt, dried rosemary or thyme, and fresh parsley to the marrow in the food processor. Blend until smooth and well combined.  

7. Transfer the mixture to a container and refrigerate until firm.  

8. Use it as a spread on sourdough bread, as a topping for meats or vegetables, or even as a nutrient-packed addition to your baby’s first foods.
